I bought a new Indian vegan cookbook today. I went to Whole Foods and gathered ingredients to make two nights’ meals. I’m really excited to get going because I’ve always wanted to cook Indian food but never understood what dishes go with what. This book, the Indian Vegan Kitchen, is making it easy for me with a month of menus planned out. I’m going to to make menu one tonight which is black-eyed peas, seasoned zucchini, and basmati rice. They all have names I can’t pronounce but maybe in time I will.
It turned out wonderful and even better, it felt so healthy. And even though it was supposed to be super easy, we still ate after midnight.
